I believe it’s a Charlie Christian pickup by Lollar. If you are on Instagram Scott is sharing numerous photos of the building process. You can see more details there. Chambered body design, wood selection etc.

His new guitar is a Scott Baxendale made Cooleycaster. It's a little different than the first one in that it's chambered and the top is made of Kauri wood, which Scott says is over 50,000 years old  and came from the peat bogs of New Zealand. My understanding is that the neck pickup is a Charlie Christian and the bridge is a Lollar. As far as the neck and neck profile, I think those are the same as the first Cooleycaster.

Isn’t the Charlie Christian also made by Lollar?

Me neither really, but Lollar have them on his webpage. Seems other "boutique" guys make their versions as well, but I guess it makes sense both neck and bridge are Lollar.

The CC is a VERY old design. Based on 1930's era jazz hollowbody pickup.
